Caramel Apple Dip

16 caramels (or 1 jar ice cream topping; use butterscotch or caramel flavor)
1/4 cup water, cream or milk
1/2 cup brown sugar
1 8oz brick cream cheese
1/2 teaspoon vanilla (optional)

Melt caramel and water. Stir in cream cheese and brown sugar while caramel is warm (cube the cream cheese for easier melting); use a small whisk to stir mixture.

Pour into bowl or onto a platter/plate. Place apple slices around the bowl or in the dip on the platter. Sprinkle with optional nut topping.

Hint: soak apple slices in Sprite so they won't brown.
