Creamy Potato Soup

 
4 cups chicken broth (or use bouillon and water)
1 package (6 cups) shredded hash browns
1/2 cup grated carrots
1/2 teaspoon seasoned salt
1/4 teaspoon black pepper
1 bay leaf
1 teaspoon dried dill weed
1/2 cup sour cream
1/2 cup milk
1 package (8 oz) cream cheese
 
Mix all but the sour cream, milk, and cream cheese in a large pot. Simmer for about 15-20 minutes. Stir in the remaining ingredients. Let the cream cheese melt, then serve.
Variation: Use one cup half-and-half instead of sour cream & milk
